Caravans in Camelot Unchained will be used for transport of resources, merchandise, possibly siege engines, travel etc. Same as boats, caravans will have maintenance cost [1] and defending them on dangerous routes will contribute to better rewards and progression through the Daily Report.[2]
Since "Even when/if we put mounts in the game, they will not move as fast as the speed class will but they will be very useful for carrying stuff around",[3] caravans will likely not be used primarily for travel.
